good point but you still have to learn from the experienced chef or recipe and when you've learned, you can redesign the recipe and have your own variation.

hey cheff thanks for posting! comeinf from an italian family where everything is cooked at home i have to say i coudlnt agree more on this video! since i was a kid ( and still now days as an adult ) i have been eating my mothers food, and she has never followed a recipe and let me tell you she makes some of the best food ive had! Thanks for sharing your passion!

Now, onto my question. Could you possible to a video explaining the difference between maize, corn flour, corn starch, and any other corn whatever?
There are so many flours made of corn. And for some reason, I cant really find a place that will discuss all of them so that its clear what each does and what you use them for. So is there a chance you could explain it all for me?
You're the only one that gets through to me!!

The DVD is due out in July. It is all new material, with greatly improved camera quality and production values. I've upgraded my software to add many great effects. It will look nothing like Cooking Coarse. The first disk will cover Kitchen Tools & Equipment, Food Safety, and lots and lots of Knife Skills.

Chef Todd, if you are not teaching at a culinary university or institution, you should! You have such a captivating lecture style and you make great sense. I think your YouTube segments would be great for a resume...just a thought. I am inspired to try new things because of you. Keep on rockin and rollin!

You can develop that knowledge of the foundation by watching the next 165 episodes of Cooking Coarse!
(and buying my DVD in July, 2009)
It's a journey, a hobby, a quest. You constantly learn things, experimenting as you go, until you are confident. But you're never done. There's always more to learn and different ways to interpret. That's what makes it fun to me.
